Living in Denver, I became familiar with Elizabeth Yarnell when she started teaching classes at a local cooking school. Working 70 hours a week I didn't have time to cook especially if it required pre-planning, much preparation or effort. Her simple patented cooking process was the answer - one pot, healthy ingredients, pop it in the oven and dinner was ready in 45 minutes. Elizabeth recently returned to my nutrition classroom for another great demonstration with teenagers and she again had them eating eggplant and asking for more. A past diet of junk food and a diagnosis with MS have resulted in Elizabeth becoming a certified natural health professional and caring deeply about how America is eating. Glorious One Pot Meals is a realistic, contemporary, economical, healthy and delicious cookbook to have on the shelf. One does not even have to thaw out the food first to prepare these meals. A perfect gift for the college student avoiding the "Freshman 15" weight gain as they can fix these recipes in a toaster over; the busy single who can barely get to the grocery store; the fast-track family on the move; or even the retiree or senior citizen tired of cooking. A great solution for American's lifestyle and desire to eat healthy. So fun, so easy, so yummy! Peggy Harrison - Centennial CO

I had never heard of this type of one-pot cooking. I've had a 4 qt Staub cocotte sitting unused in a cupboard, so I checked out a library copy of "Glorious One-Pot Meals" and doubled the "Rosemary Chicken Comfort Food" recipe due to the size of my pot. I omitted the squash in deference to my husband and it turned out wonderfully! It was very hard for me not to add some liquid, but I didn't. The chicken was so moist and there was plenty of juice in the bottom. I could plate the potatoes, green beans, onion, mushrooms and chicken seperately and they maintained their individual textures and flavors. I'm sold and am very impatient for the new edition to be available!!

I live in Denver and have had the opportunity to learn this method directly from Elizabeth Yarnell at a local cooking school. Every time I make one of Elizabeth's recipes I am struck with how easy, nutritious and pretty they are. Anyone with a desire to cook healthy and fast meals should check out this method. Investing in a good dutch oven is key...but worth it!!
